Very simple go-to recipe we do weekly at our home. Grills quickly, just like it would over a gas grill, but you get a wonderful wood fired flavor from the pellets. Hope you enjoy!
Ingredients:
- 7 Boneless Skinless Chicken Breasts
- Rufus Teague Chick N Rub
- 1/3 C of Rufus Teague Touch O Heat Sauce
- 1/3 C of Rufus Teague Apple Mash Sauce
- 1 TBSP Texas Rib Candy Apple Cherry Habanero
Directions:
- Flatten each chicken breast by placing, one at a time, in a 1 gallon zip lock bag and pounding them out flat. This will allow for more even cooking.
- Arrange the chicken breasts tops down and season liberally
- Lightly spray each chicken breast with olive oil, to set the rub and prevent sticking
- Flip each chicken breast and repeat seasoning and spray with olive oil
- Refrigerate 1 hour
- Prepare a Green Mountain Grill cooker for 450 degree cooking
- Cook the chicken breasts 15 minutes, per side
- Once the chicken breasts reach 160 degrees internal temperature, sauce the tops liberally
- Cook another 5 minutes to set the sauce
- Rest the chicken for 5 minutes, serve and enjoy!
